Chocolate Rocks

Oh, you simply MUST try these! They are so yummy and chocolaty good it's easy to get carried away. Keep in mind that these are prunes so you probably don't want to eat too many!

Serving Size  : 24

Ingredients

500  grams dark chocolate, chopped

1  lb soft pitted prunes

 

Instructions:

1. Heat 1 to 2 inches of water in a 2 qt. saucepan until it begins to

simmer. Place chocolate into a double boiler and place over the saucepan.

Stir every few minutes until chocolate is completely melted.

2. While chocolate is melting, prepare rack and sheet pan. Line a cookie

sheet with parchment paper and place cooling rack into pan.

3. Remove pan of chocolate from heat and lit sit for about 5 mintes so it

will cool and thicken. Stir in prunes until they are completely coated.

4. Using a fork, scoop out prunes one at a time, letting the excess

chocolate drip back into the pan. Place chocolate covered prunes on cooling

rack.

5. Place rack in the refrigerator until chocolate is solid again. Remove

rocks from rack with the blunt tip of a knife to avoid getting fingerprints

in the chocolate. Store in an airtight container in the refrigerator.

Ingredients:

1 cup nonfat Greek yogurt
1 tsp. orange zest
½ tsp. vanilla extract
1 tsp. ground flaxseeds
1 orange, peeled and sliced
1 Tbsp. dried cranberries
1 Tbsp. unsalted choppedwalnuts

Instructions:

Combine yogurt, orange zest,vanilla and flaxseeds in a bowl. Mix thoroughly. Spoon half of yogurt mixtureinto a tall glass. Layer half the orange slices, ½ Tbsp. cranberries, and ½Tbsp. walnuts. Top with remaining yogurt mixture and finish with remainingorange slices, ½ Tbsp. cranberries and ½ Tbsp. walnuts. Makes 1 serving.

Ingredients:

 

1 cup unsalted almond butter or natural peanut butter

¾ cup sucanat or demerara sugar

1 large egg

½ tsp. baking soda

¼ tsp. sea salt

3 oz. dark chocolate chips (70% cocoa or greater)

 

Instructions:

 

Preheat oven to 350 degrees. Stir together first 5 ingredients in a medium bowl until blended. Stir in chocolate.

Drop by rounded tablespoonfuls onto parchment lined baking sheets. Bake for 10 – 12 minutes or until lightly browned. Let cool for 5 minutes on baking sheets. Move to a wire rack and let cool for 15 minutes.

You simply MUST try this cake!!!! Hard to believe it's only 250 calories a serving.

 

Ingredients

Olive oil cooking spray

1/4 cup plus 1 Tbsp. unsweetened dark chocolate cocoa powder

1/3 cup Sucanat or Turbinado sugar

3 Tbsp. unsweetened applesauce

3 Tbsp. olive oil

1 egg

1 egg white

1/2 cup white whole wheat flour

1 tsp. vanilla extract

Instructions:

Preheat oven to 400 degrees. Light;y spray 4 (4 oz) ramekins with olive oil spray.

In a medium bowl combine cocoa powder and sugar. Whisk in applesauce and oil. In a small bowl lightly whisk egg and egg white and add to cocoa mixture, mixing until smooth.

Stir in flour and vanilla until just combined. Do not overmix. Divide mixture among ramekins. Place on a baking sheet and bake for 9 minutes. Centers should be soft but sides should be firm. Invert onto serving plates. Let stand a few minutes before removing cups. Serve warm. Makes 4 servings.

You MUST try these!  Kids as well as adults love them. You'll never buy packaged muffins again after you eat these.

 

Ingredients:

1 cup applesauce

1/2 cup sucanat 

1 tsp. vanilla extraxt

1/4 tsp. almond extract

3/4 cup oat flour

1/3 cup cocoa powder

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 cup semisweet chocolate chips

Dash cinnamon

Preparation:

Preheat oven to 375 degrees. Line muffin tin with paper baking cups. Pour into muffin cups. Bake for 20-22 minutes, rotating pan halfway through baking time.  Muffins are done when toothpick inserted into center of muffin comes out clean. Makes 8 muffins.
