This recipe is made with brown rice, which is so much tastier and healthier than white rice. Ingredients: 1/4 c. chopped mushrooms 1/4 c. chopped celery 1/3 c. chopped green onions 1/4 c. chopped red pepper 1 c. brown rice 2 1/2 c. water Preparation: Preheat oven to 350 degrees. Coat a large 3 qt. baking dish with cooking spray. Saute vegetables in a small frying pan until tender. Place all ingredients in baking dish and cover. Bake in oven for 45 minutes. Makes 4 servings. Nutritional information: Calories: 181, protein: 4 g., carbs: 37 g., fat: 1 g.
