Ingredients:

 

1 cup unsalted almond butter or natural peanut butter

¾ cup sucanat or demerara sugar

1 large egg

½ tsp. baking soda

¼ tsp. sea salt

3 oz. dark chocolate chips (70% cocoa or greater)

 

Instructions:

 

Preheat oven to 350 degrees. Stir together first 5 ingredients in a medium bowl until blended. Stir in chocolate.

Drop by rounded tablespoonfuls onto parchment lined baking sheets. Bake for 10 – 12 minutes or until lightly browned. Let cool for 5 minutes on baking sheets. Move to a wire rack and let cool for 15 minutes.

You simply MUST try this cake!!!! Hard to believe it's only 250 calories a serving.

 

Ingredients

Olive oil cooking spray

1/4 cup plus 1 Tbsp. unsweetened dark chocolate cocoa powder

1/3 cup Sucanat or Turbinado sugar

3 Tbsp. unsweetened applesauce

3 Tbsp. olive oil

1 egg

1 egg white

1/2 cup white whole wheat flour

1 tsp. vanilla extract

Instructions:

Preheat oven to 400 degrees. Light;y spray 4 (4 oz) ramekins with olive oil spray.

In a medium bowl combine cocoa powder and sugar. Whisk in applesauce and oil. In a small bowl lightly whisk egg and egg white and add to cocoa mixture, mixing until smooth.

Stir in flour and vanilla until just combined. Do not overmix. Divide mixture among ramekins. Place on a baking sheet and bake for 9 minutes. Centers should be soft but sides should be firm. Invert onto serving plates. Let stand a few minutes before removing cups. Serve warm. Makes 4 servings.

You MUST try these!  Kids as well as adults love them. You'll never buy packaged muffins again after you eat these.

 

Ingredients:

1 cup applesauce

1/2 cup sucanat 

1 tsp. vanilla extraxt

1/4 tsp. almond extract

3/4 cup oat flour

1/3 cup cocoa powder

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 cup semisweet chocolate chips

Dash cinnamon

Preparation:

Preheat oven to 375 degrees. Line muffin tin with paper baking cups. Pour into muffin cups. Bake for 20-22 minutes, rotating pan halfway through baking time.  Muffins are done when toothpick inserted into center of muffin comes out clean. Makes 8 muffins.

Yep, you read that right. You HAVE to try these - YUMMY!

Ingredients:

Olive oil

6 oz. dark bittersweet chocolate, broken into chunks

3 large egg whites

1 1/2 c. sucanat, divided

1/2 tsp. vanilla extract

1/3 c. unsweetened cocoa powder

4 1/2 tsp. arrowroot powder

Preparation:

Preheat oven to 375 degrees. Lightly oil baking sheets with olive oil.

Place chocolate in microwavable bowl on high for 2 minutes, stirring once halfway through. Set aside to cool.

Using an electric mixer on high speed, beat egg whites until soft peaks are formed. Gradually beat in 1 cup sucanat and continue beating until mixture is creamy. Add vanilla.

In a small separate bowl combine remaining 1/2 c. sucanat, cocoa and arrowroot powder. Beat into egg whites on low speed. Stir in warm chocolate and continue stirring until mixture thickens.

Place by rounded Tbsps. onto 2 prepared baking sheets and bake for 10 minutes. Cool for 10 minutes on baking sheets before transferring to racks to cool completely.

Note: Use parchment paper on a cookie sheet for baking these cookies.
